When do I harvest sweet potatoes?

I planted them in late May, early June. The vines are still healthy dark green, no yellow leaves, no flower buds and growing like crazy. By the way I live in Tallahassee, up in North Florida.

When do I harvest sweet potatoes?
Wait until the vines die. Dig up the potatoes. Lay out in full sun for several days. Turn them occasionally. If not sun cured, They will not be sweet. Store in a dry place. I like to use onion sacks and hang them up in a shed until time to eat them.
Reply:since you live in a warm climate then you will want to dig one up and see if it is the size you want if not let it go for a short while longer..you can replant the one you dug up...
Reply:Thats good, but you may not have die back in Fla. so you may want to dig up one or two and see if the size is good, if it is, follow the above directions.
